Vegan pizza two ways & bonus cashew cheese recipe!

Some nights you just need a good pizza! But the thought of a pizza without cheese and a sprouted grain crust seems a little anxiety provoking….will it be satisfying and will it take forever to make? If you have had cashew cheese at a good Vegetarian restaurant, you know how amazing it is but there is no way to make that at home! Where to begin?!

 

Well….it’s actually super easy! And we have done the work for you! Almost. You still need to go into the kitchen and have some fun. We have assembled two simple Plant-Based Pizzas that are so incredibly tasty + healthy + nourishing. These pizzas provide your body with healthy ingredients that promote energy but won’t weigh you down like traditional pizzas sometimes do.

 

 

CASHEW CHEESE

 

Don’t let the idea of a cashew cheese scare you off. This recipe is so very simple! The only thing you have to remember to do it soak the cashews overnight. Cashews are loaded with protein, antioxidants, magnesium (helps support strong bones), zinc and heart-healthy monounsaturated fats. Cashew cheese is also a great alternative to dairy cheese since traditional cheese has inflammatory effects on the body.

 

This cashew cheese recipe yields about 1 cup. You don’t need a lot so you can store it in the refrigerator and have it on hand as a replacement for cheese in other recipes. It also firms up a bit in the refrigerator and becomes a nicer consistency.

 

1 cup raw cashews (soaked overnight)

½ cup extra virgin olive oil

½ cup unsweetened plain almond milk

2 tablespoons nutritional yeast

1 teaspoon soy sauce

3 cloves garlic

 

Place all ingredients in high speed blender and blend at high speed until creamy.

 

 

THE CRUST

 

You have a couple of different options for a Vegan crust!

 

In this recipe, we chose to use a premade Sprouted Grain crust that is excellent and sold by Trader Joes. If you don’t have access to this brand, your local market probably has their own version. Angelic Bakehouse also sells a great sprouted grain crust either directly from their site or through Amazon.

 

You can also make your own crust. This is a little more time consuming but so fun to create and really cool to know how to do! Raw + Radiant is a great cookbook and has a nice walnut, squash, flax and date crust! You can find the cookbook here.

 

 

 

SPRING GREENS VEGAN PIZZA

 

Pesto

2 cloves garlic

¼ cup extra virgin olive oil

¼ tsp salt

¼ cup pine nuts

½ teaspoon lemon juice

2 ½ cups basil

 

Cashew Cheese

see above

 

Pizza Toppings

1 tablespoon olive oil

3 cups arugula

pinch of crushed red pepper 

2 tablespoons sunflower seeds

1 tablespoon hemp seeds

pinch of fresh black pepper

 

Place all pesto ingredients in food processor and blend until smooth

Drizzle pizza with extra virgin olive oil

Spoon 2 tablespoons cashew cheese onto crust and spread towards edges

Spread 2 heaping tablespoons of pesto over cheese and towards the edges

Cook in oven according to packaging

Remove pizza from oven and allow to set for 2-3 minutes

Top with arugula and fresh black pepper

Sprinkle with crushed red pepper, sunflower seeds and hemp seeds

 

 

FRESH GARDEN VEGAN PIZZA

 

Pesto

2 cloves garlic

¼ cup extra virgin olive oil

¼ tsp salt

¼ cup pine nuts

½ teaspoon lemon juice

2 ½ cups basil

 

Cashew Cheese

see above

 

Pizza Toppings

Handful of cherry tomatoes

1 dozen uncooked asparagus spears

pinch of fresh black pepper

1 tablespoon crushed red pepper

2 tablespoons toasted pine nuts

fresh basil leaves to top

 

Place all pesto ingredients in food processor and blend until smooth

Drizzle pizza crust with olive oil

Spread 2 heaping tablespoons of pesto over crust and spread towards the edges

Arrange fresh cherry tomatoes and asparagus over crust

Dot with cashew cheese and drizzle more cheese if desired

Cook in oven according to packaging

Remove pizza from oven and allow to set 2-3 minutes

Sprinkle with fresh black pepper, crush red pepper, toasted pine nuts and fresh basil leaves
